Healthy May Week 3

This week's meal was a strange take on mousakka. I fried some semi circles of aubergines with onions. when browned I added the onions and some chopped veg to a baking dish.... Added Passata and mixed. I then laid the aubergine semi circles on top and added some grated cheese.

I followed this by baking some choc chip cakey bites! 
To Make Mix:
 2 Eggs
200g Flour
150g Philladelphia Light 
50g Clover
200g Golden Caster Sugar
Dark Choc Chips


They were so tasty I ate a load and then did not feel so healthy!
